- Chicken or goat meat
- Fresh or dried fish
- Utazi or Uziza leaf
- Chopped waterleaf (optional)
- Chopped Ugu leaf
- Red oil
- Fresh or ground pepper
- 2 big onions
- Seasoning cubes
- Salt for taste
- 3 tablespoon crayfish
- Blended tomatoes
Instructions On Preparation
Step 1. Get a clean pot and pour in your washed fresh fish or chicken or goat meat. Add water, seasoning, cubes, pepper, salt, and Onions. Place the pot on the cooker and allow to simmer for about 10 to 15 minutes.
Step 2. Next boil some water, get a bowl and put your shredded dried fish and add a little hot water. Allow to soak for about 10 to 15 minutes. Then get your ground Egusi and add hot water in another bowl, mix the water with Egusi to form a thick paste.
Step 3. Get another clean pot and pour in your red oil, allow to heat and add your blended tomatoes, allow to fry for about 13 minutes, just like you do your stew. It gives the tomatoes a different nice taste.
Step 4. Next, add your fish or chicken stock to the second pot, add your Egusi bit by bit in small rounds like you are frying Ponce. Stir for a while and try to divide your Egusi as it will stick.
Step 5. Add your seasoning cubes, salt, fresh pepper or ground pepper, your socked dried fish, onions, and other spices you use specially. Do make sure to taste and add more ingredients if needed. Stir and allow to simmer for about 25 minutes.
Step 6. Lastly, add your Ugu and Utazi leaf, and close the pot without stirring. Allow to simmer for 5 minutes and stir afterward. If the soup is too thick, do add water. Take down the heat and allow to simmer for another 5 minutes. Finally, your soup is ready to be served and eaten.
Note On Recipe
âś’ Make sure your blended tomatoes are well fried before adding your stock and Egusi. If not well fried it will give your soup a sour taste, and that won’t be nice for your first trial.
